With less fat than the shoulder, the leg has a light marbling throughout the meat and gelatinous connective tissue between the muscles. Leg of Lamb is a great cut to serve for entertaining, this meat is sweet and tender. "Butterfly" just means you cut the meat in half and the bone is removed so it lies flat and can be cooked more quickly.
